Fruit of our interest and our respect for our winemaking heritage and our eagerness for making different wines, Celler Pardas us presents you a unique rosé wine made with the local Sumoll variety. A grape which has been lately rejected and classed as common and course, one that was about to disappear and one that can only express its fullest potential with the most severe viticulture, and a very accurate winemaking process which respects the grape.

At Pardas we do not understand rosé wines as a transition of white to red wine, but as a whole world on its own. Both for its conception as well as for its production we consider Sumoll Rosé as a truly terroir wine.
When this declaration of intent was written in 2005, the Sumoll variety was still not official within the Penedés D.O. Today, 15 years after, Sumoll is a respected and valued variety, with a huge potential. We are proud to have been one of the pioneers with this variety that we like so much.

 

2022

Vineyards:

Torró


Soils:

Clay and limestone. Loamy calcareous soils.


Varieties:

100% Sumoll

 

Farming method:

Organic farming.
Neither herbicides, pesticides nor any other chemicals were used on any of the vines planted to make our Sumoll Rosé.
We do not plough the ground and we leave the grasses and plants to protect the soil.

Production:

7805 bottles


Harvesting:

100% picked by hand on 2ND of September 2022 .
Plastic 20 kgs. cases
Rigorous selection in the vineyard.

Winemaking:

Destemmed crushed and filled the tanks by gravity.
Skin maceration 24 hours
Free-run must 50%.
Speontaneous fermentation in stainless Steel tank during 20 days at 18ª .
No finning agents used.

 

Ageing:

2 months in stainless steel.

Analysis:

Alcohol Content: 12,00 vol.
Volatile acidity: 0,19 g/L
Total acidity : 4,30 g/L
PH: 3,12
SO2: 13/28 mg/l
